This is what I made for Monkey's birthday cake. It's fun to watch in the oven because the marshmallows go up to the top while the strawberries go to the bottom.
Strawberry Shortcut Cake
1 cup miniature marshmallows
2 cups (2 10oz pkgs) frozen sliced strawberries and syrup, completely thawed
1 small pkg. strawberry jello
2 1/4 cup flour
1 1/2 cup sugar
1/2 cup shortening
3 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 tsp. vanilla
3 eggs
Grease bottom of 9x13 pan; sprinkle marshmallows evenly over the bottom of pan
Thoroughly combine completely thawed strawberries and syrup with dry jello; set aside
In large bowl combing remaining ingredients. Blend at low speed until moistened; beat three minutes at medium speed, scraping sides of bowl occasionally
Pour batter evenly over marshmallows
Spoon strawberry mixture evenly over batter.
Bake at 350 degrees for 45-50 minutes.. until golden brown and toothpick inserted in center comes out clean
