Chicken Tortilla Soup

1/2 lb. cooked, shredded chicken
4 c. chicken broth (or 4 cups of water and 4 chicken bouillon cubes)
1 sm. can of tomato sauce
1 tsp. (or more to taste) chili powder
1 tsp. (or more to taste) oregano
1 sm. can of diced green chiles
1 can corn

Add all ingredients, bring to a boil and simmer for about 20 minutes. Garnish with tortilla chips and shredded cheese.

My favorite way to cook chicken for soups or casseroles is to boil a pot of water, add the chicken and keep it in the water for one minute. Remove chicken and let the water return to a boil. Turn off heat and let sit, covered, for 45-60 minutes. Sometimes if I just do a little bit of chicken, the water is still boiling after the minute is up and I'll just turn the heat off after a minute. The chicken shreds easily.
