So Many Tomatoes? What To Do?

I'm not entirely convinced that our garden is a money saver for us - the soil dirt sand is horrible and needs a lot added to it in order for anything to grow in it - but we sure do have a lot of tomatoes. The best thing to do with mass amounts of tomatoes is make salsa, but since the chile plants forgot to grow, we'll have to do the next best thing, tomato sauce. Here's how we make tomato sauce, it's easy and relatively quick.

Wash tomatoes and either halve them or quarter them (depending on their size) and toss them in a blender - peels, seeds, and all. I used cherry tomatoes also and just tossed them in as is.


Blend until you have a orangy, frothy liquid. Pour this into a sauce pan.


Bring to a boil and then simmer for about an hour, until the sauce turns into well, a sauce. It will be much more red in color and less frothy.


That's it! You could press it through a sieve at this point to get rid of the seeds if you want, but we haven't found that the seeds take away from the texture or flavor of the sauce. Besides, it's so much easier to just leave it as it is.
