Under 10 Recipe: Hawaiian Kabobs

Every weekend, I post a tried and true recipe (for my family at least) that has ten or less ingredients. Follow this link for more under 10 recipes


I'm kinda sorta cheating on this one.  The recipe, as it's listed, has 13 ingredients.  I omitted one because I didn't have it, which brings it down to 12.  I omitted another because it's something we don't care for (now we're down to 11) and rice is listed as an ingredient, but really shouldn't count because in this case it's totally a side dish.  So now we're at ten.  These are kabobs, so really you can put whatever veggies you'd like on (which, unfortunately will probably put you over ten), but you could also just use the marinade and leave out the kabob-ing.    Now, after one heck of a disclaimer, here's the recipe.

Hawaiian Kabobs (my version - please click the link to check out the original)

1 1/2 lbs. chicken breast, cut into chunks
1 can unsweetened pineapple chunks
1/2 cup soy sauce
1/4 cup vegetable oil
1 tbsp brown sugar
1 tsp. garlic powder
2 tsp. ground ginger
1/4 tsp pepper
1 large green pepper, cut into chunks
18 cherry tomatoes

Drain Pineapple and set pineapple aside.  For the marinade, mix pineapple juice with the next six ingredients.  Add chicken and chill for at least one hour*.  Remove chicken from marinade.  Place chicken, pineapple, green pepper and tomatoes onto skewers.  Grill about 20 minutes or until chicken is done, baste with remaining marinade if desired.
*The recipe says to cook the marinade before adding in the chicken.  I didn't and we all survived (I think?).  I also marinaded it all day.

Some kabob tips:

  • It's fun and pretty to put different things on each skewer, but since everything cooks at different rates, it's much smarter to do skewers of like ingredients (all chicken on one skewer, all tomatoes on another, etc.)
  • Soak your skewers beforehand to prevent them from burning
  • Marinate your veggies too!  Other veggies you could use would be zucchini, yellow squash, onion, eggplant, mushrooms (yeah, that's the one we left out) - basically whatever floats your boat.
