Under 10 Recipe: Five Ingredient Pancakes

Every weekend, I post a tried and true recipe (for my family at least) that has ten or less ingredients. Follow this link for more under 10 recipes
Breakfast for dinner is always fun. I know that pancakes tend to always have less than ten ingredients, so I feel like this is a bit of a cop-out, but we had this particular recipe this week and I was reminded of how tasty it is, so I wanted to share.
Five Ingredient Pancakes
1 cup milk
3 Tbsp salted butter (we use margarine)
1 1/2 cups flour
2 1/2 tsp. baking powder
2 large eggs
Mix all ingredients together.* Do not overmix. Heat large nonstick griddle or skillet over medium heat until hot enough to sizzle a drop of water. For each pancake, pour a scant 1/4 cup batter onto the griddle or skillet. Adjust the heat to medium-low. Cook until the tops are covered with small bubbles and teh bottoms are lightly browned. Carefully turn and brown the other side. Repeat with remaining batter.
*The recipe says to melt butter along with the milk, in a saucepan. We always just melt the butter in the microwave and add everything at the same time.
